High quality Kaffir Lime zest from fruit produced here on our nursery in the Lot (France), grown using neither pesticides, insecticides nor fungicides. The zest only, without any pith, is carefully removed by hand from freshly picked fruit and is then dried at 40° C.
Kaffir Lime is traditionally used in Asian, Mauritian and Reunion Island cooking. It adds a citrus note but its unique exotic flavour distinguishes it from any other citrus fruit.
The zest has a stronger flavour than the leaves and is used in fish and chicken curries, for marinades, citrus desserts and cakes. To make a Kaffir Lime oil leave the zest to macerate in a neutral oil for 3 weeks.
