Vadouvan is a blend of Indian spices with cooked onions, garlic and shallots. A slightly oily blend that is ideal to use as a base for many dishes, giving a wonderful spicy onion flavour. Perfect for marinades for chicken and fish, when cooking shellfish (mussels, cockles, prawns) and as a base for stock or a vegetable soup. A great time saver for making savoury sauces.
Ingredients: onion, garlic, salt, urid lentils (vigna mungo), fenugreek, mustard, turmeric, cumin, fennel, asa foetida, curry leaves, coco and sesame oil.
