An Indian seasoning with a beautiful red colour, full of flavour, very aromatic yet not too hot. Use as a table spice to sprinkle over rice, pasta, eggs, minced meats, in the same quantities as you would for salt. Use as a rub for chicken or add to a sauce for meat or a stock for fish. Makes wonderful canapés and dips mixed with fromage blanc (mix the soft cheese with a little olive oil and spice or simply sprinkle the spice over).
