A seasoning that is widely used in Japan, particularly with white rice. The grains of sesame are roasted then mixed with an ume plum salt solution. Ume plums are in fact Japanese apricots (prunus mume) which are picked before fully ripe. They are then mixed with red-shiso leaves (perilla frutescens) which give the glorious red colour, salt and other ingredients creating a totally irresistable seasoning.

Use them to season white rice, home-made sushis, tuna à la plancha, mix with fromage frais for canapés or with fromage blanc and fruit for a refreshing dessert. Add just before serving to keep all the crispy crunchiness intact.
