Mace is the lacy covering of the nutmeg and can be used to replace nutmeg in most recipes. Its spicy flavour, strongly reminiscent of nutmeg with a hint of pepper, is more delicate than nutmeg itself. Use sparingly and add at the end of the cooking period. Use for macerating, mulled wine, sausage meat and pâté recipes, fish soup, eggs and shellfish. Break into slivers or blades using scissors or a blender and remove before serving.
