The black Auricularia auricula-judae mushroom is small, the top is darker than the velvety grey-yellow underside, it is used whole. A basic ingredient in Chinese soups don’t hesitate to add them to instant soup, to add more body and flavour to a stock and they’re great with sautéed meat (chicken, pork and beef) accompanied by pasta or rice. They add a soft consistency and crunch to dishes but have a neutral flavour. They are an indispensable ingredient in spring rolls.
Leave them to soak in warm water and use immediately once rehydrated.
