Ingredients (for 6 people):

  •     250g pastry chocolate
  •     100g butter
  •     4 egg yolks
  •     6 egg whites
  •     40g sugar
  •     3g green cardamom powder
  •     salt


Melt the chocolate in a double boiler. Mix. Add the butter and stir.

Off the heat, add the egg yolks, mix.

Beat the egg whites in snow with a touch of salt (salt makes it easy to take the whites and also serves as a taste enhancer!). Tighten the whites by adding the sugar, then add the cardamom powder and stop the beater.

Gather the chocolate mixture and whites gently to break the whites to a minimum.

Spread the mixture in ramekins and let stand for at least 3 hours in the refrigerator.
