LAVENDER CHICKEN WITH HONEY & LEMON
For 6 people
Preparation time: 10 minutes, few hours for the marinade
Cooking time: 40 minutes
- 6 chicken thighs
- a good handful of lavender buds (must be angustifolia/culinary lavender)
- 2 tbs of olive oil
- 2 tbs of honey
- 2 tbs of thyme
- juice of a large lemon
- pinch of salt
Bruise the lavender buds, and then combine them with the olive oil, honey, thyme and juice of the lemon. Add a pinch of salt to taste. Pour over the chicken, cover and leave to marinate for a few hours or, preferably, overnight.
Bake at 200°C (gas mark 6) for 40 minutes turning the chicken pieces so that they are brown all over.
Serve with a baguette and a green salad. Yummy !
