Citrus aurantium L.
Distilled from the flowers of the bitter orange tree, orange flower water has a mild sweet flavour. Widely used in north African cooking and generally around the whole of the Mediterranean, this strongly perfumed water is a classic ingredient for desserts and pastries from the Maghreb. Try using it to make madeleines, clafoutis, custards and creams, wonderful on a pancake sprinkled with sugar or in warm milk.
