Iyokan is a popular citrus of Japanese cuisine resembling a small orange. Little known in the West, it is cultivated and used mainly in Japan Its candied peel, delicately sour-tasting, releases notes of orange and sweet tangerine.
Whether it is savoured as a treat or used in cooking, the iyokan satisfies the sweet palates of exoticism's lovers. It is simply added to the classic pastry recipes: cakes, macaroons, madeleines, cookies... Also include in fruit salads, chocolate or fruit mousses, ice creams. It can also bring an interesting acid contrast in a seafood dish or with duck meat.
