This quality angelica is grown around Niort, whose candied stems are a gastronomic specialty. Peeled and drained, it is naturally green, without colouring.
Its flavor is soft, sweet, slightly bitter and spicy. Fondant, it stays for several months kept dry and out of the light in an airtight box.
Delicious as candied fruit, it can be cooked in cakes and pastries, epiphany cakes, Christmas chocolates or fruit salads.
