Cut your vegetables into pieces and fill a sterilized jar 2/3. Bring to a boil 3 vols of water, 2 vols of vinegar, and 1 vol. of powdered sugar then pour over the vegetables, add 1 tablespoon of spices for 1 pot of 50cl.
This mixture is also perfect for seasoning a court-bouillon. Add dice of carrots, onions and leeks and voila!
