Sodium chloride
French salt from the salt pans of Aigues-Mortes in the Camargue. An exceptional site covering several thousand hectares with mild winters and hot summers, a natural reserve home to many protected animal and plant species (it is the most important reserve for pink flamingos in Europe). A salt producing region since antiquity its ecosystem that has been protected and preserved within its wild landscape.
Fleur de sel (fine salt): produced in summer, when the wind drops and millions of fine salt crystals form on the surface of the water creating the gourmet ‘fleur de sel’ which is still collected by hand as it has always been, by the ‘sauniers’.
