Piper borbonense


This little peppercorn looks very similar to the cubeb peppercorn, slightly smaller but with a longer tail. Growing wild in the forests of Madagascar it is picked by hand from the pepper vines which can grow up to 20m long, making the pickers climb to dizzying heights. One of the rarest peppers it has a unique flavour, delicate yet strongly aromatic. Add at the end of cooking to preserve its complex aroma. Added to dishes with a sauce it rehydrates, developing a pinkish red colour and a perfect consistency, succulent and tender it explodes with flavour as you bite into it. Use a tea-ball of voatsiperifery peppercorns in a dish of sausages and lentils to give a truly wonderful flavour, their subtle sweetness makes them an original choice for desserts, particularly for strawberries. Once you've tasted them you'll always want to keep them handy ... even children appreciate them.
