Description
Piper longum
Different from most black peppercorns these look like small dark catkins, with a peppery slightly bitter taste. An unusual flavour which is well balanced with both woody and floral notes. Widely used in Greek and Roman cuisine, ground over fromage frais and fruit. It is used whole in pickles and other preserves and can be crushed using a pestle and mortar or ground in a coffee mill to produce a fine powder.
