Xylopia aethiopica
Aromatic, medium-spicy African pepper. The fruits are blackish, long, narrow and bumpy berries. Crush it with a mortar, mix it with a blender or hard spice mill. Same uses as black pepper but with a very original fragrance with woody, musky and floral notes. Aromatizes marinades, stews, poultry, pickles and vinegars. Fits many dishes once adopted. In Senegal, it is mixed with coffee which, thus flavoured, takes the name of 'café touba'.
