Schinus terebenthifolius
Full of flavour with a mild almost sweet taste and not at all hot. Their aroma has a hint of resin, somewhere between black pepper and juniper berries. Use them whole or ground using a pestle and mortar, they are too soft to grind in a peppermill. Perfect for seasoning white meats. Try chicken or turkey breasts pan fried with shallots and served with a pink peppercorn cream sauce. Their mildness means its a spice children often appreciate. The flavour is fairly strong so use with moderation.
