Our dried green peppercorns can be used exactly as you would use black pepper. Green peppercorns are picked before they are ripe which gives them a fruity taste with a hint of cloves. Their strong flavour does not linger on the palate as long as that of black peppercorns. Use them to season vinegars, grilled meats and fish, sauces and they're ideal in a cream sauce for fish. Leave them to marinate overnight in a glass of white wine, or if you're short of time, for 2 hours in water. White wine is the perfect accompaniment for any dish seasoned with green peppercorns. Use them whole in the kitchen or in a peppermill for the table.
