Camellia sinensis
From the province of Fujian in China, this tea has the particularity of being smoked with pine wood. This technique brings very aromatic woody and smoky notes reminiscent of leather and spices.
This tea can be enjoyed as a classic infusion or used to flavor your dishes.
In infusion, it is very pleasant to taste it at breakfast or with a brunch.
In the kitchen, flavor your dishes with fish, chickens, vegetables by infusing this tea in your sauces or cooking water to give them a delicate smoky taste. You can also mix this tea with salt and grind it on your dishes.
Try a mashed potato with smoked tea, letting the tea infuse in warm milk or cream.
Make an asian marinade by mixing this tea with sesame oil, rice vinegar, soy sauce, garlic and ginger. What to perfume wonderfully pretty backs of cod or pieces of chicken!
Infuse 3-4 min in 95°C water.
