Preparation time: 15 minutes
Cooking time: 12-15 minutes
- 1 cup of rolled oats
- 1 cup desiccated coconut
- 1 cup of all-purpose/plain flour
- 1 cup of sugar
- 2 tbs of lavender buds (must be angustifolia/culinary lavender)
- 125g butter
- 2 tbs golden syrup
- 1 tsp baking soda
- 2 tbs boiling water
Pre-heat oven to 180°C. Lightly grease baking tray or line with baking paper. Combine oats, coconut, flour and sugar together in large bowl. Melt butter and golden syrup together.
Dissolve baking soda in boiling water and add to the butter mixture which is poured into the dry ingredients and mixed together.
Place buds on a saucer and roll teaspoonfuls of the mixture into balls with the buds. Place on baking tray – allowing room for them to spread.
Bake for 12-15 minutes, cooking one tray at a time.
