PUMPKIN CAKE WITH EPICES DOUCEUR
- 500g of pumpkin
- 150g of plain flour
- 120g of brown sugar
- 3 eggs
- 80g of walnuts or pumpkin seeds or sunflower seeds
- 1 sachet of baking powder
- 2 tbs of sultanas
- 1 tsp of Épices Douceur
Steam or boil the pumpkin until tender then drain well and blend to a purée.
Sift the flour and add the baking powder.
Beat the eggs and the sugar together until the mixture is smooth and creamy.
Add the pumpkin purée, the flour and baking powder mix, the nuts/seeds, the sultanas and the épices douceur.
Pour the mixture into a buttered cake tin an cook at 180°.
