Capsicum frutescens
This small yellow pepper from a Colombian village is quite rare, it is dipped fresh in brine then dried. This traditional process allows it to be softened.
It is a little spicy and fruity pepper, its flavor reminds of tabasco. Its salty notes balance the heat and allows dishes to be spiced without dominating.
Use it dry whole or cut into small pieces to flavor stews, broths, marinade. Rehydrate it for 15 minutes in a little water and cut it into rings to season a salad with raw vegetables or make a spicy sauce with exotic fruits.
Also try it in exotic marinade with orange and honey or mango to flavor your white meats, fish, ceviches.
