Ilex paraguariensis

Yerba Maté comes from a variety of wild holly (which grows 12 m high) native to the forests of Paraguay, Brazil and several Argentinian provinces. The dried leaves are known as Paraguan tea, mission tea, Jesuit tea, St Bartholemew's tea, South American holly. When used as a rituel drink men drink it without sugar whereas women add sugar cane to sweeten it. For South Americans it is considered as much a rituel as a necessity. Today yerba maté is drunk in the same way as tea. Rich in vitamins and minerals it reduces water retention, aids digestion, improves circulation and fights fatigue. An infusion of yerba maté makes an enjoyable and refreshing drink with very little theanine.
Infuse for 5 minutes at 95°C.
